Scotland’s pork sector is under financial pressure. One way to address this could be to increase the value added to Scottish pork. This case study, which focusses on a Scottish pork producer, provides insights into an enterprise serving the high value pork products market and the challenges it faces.

Alongside other activities, agriculture and food production are associated with the major pollutant gases, namely CO2 (carbon dioxide), CH4 (methane) and N2O (nitrous oxide). Unsustainable practices increase emissions and can have a direct impact on the functioning and health of our ecosystems.
This preliminary research explored food and drink innovation and clustering in Scotland’s Highlands and Islands and reviewed potential opportunities for engagement with partners in the Arctic region. It addresses the Scottish Government’s Arctic Policy Framework, which seeks to reinforce and promote Scotland’s connections with northern countries.
In 2016, Nuno Silva joined the Moredun Research Institute to establish a research project focused on Antimicrobial Resistance (AMR) in sheep. Since then, his work has expanded to include the transmission dynamics of mastitis pathogens and the impact and spread of AMR across wildlife, the environment, and farm animals, including AMR from a food safety perspective, aligning with a One Health approach.
Current Research Interests:
Wendy is the Gut Health theme lead and Professor of Molecular Nutrition at the Rowett Institute. Her research focuses on developing healthy foods as part of a resilient food supply chain. This includes identifying the potential of plant-based crops, particularly in protein provision for the future and the exploitation of underutilised species to improve both nutrition and agrobiodiversity. Wendy works closely with both Scottish and Global Food Producers, as well as the wider Food and Drink Industry to identify new opportunities and was awarded FDF ‘Scientist of the Year’ for this work.

My research interests are in plant product quality especially in food applications. I have applied various analytical techniques, including metabolomics, to model how agronomy, climate, genotype or processing influences plant biochemistry and final product quality. I have a particular interest in determining how the levels of health beneficial components are genetically controlled in soft fruits. I have focused on polyphenols and their effects on human health.
Derek is the Business Sector Lead: AgriFood at the James Hutton Institute and is responsible for developing the research opportunities on agriculture, food and drink supply and value chains, production systems, biomass, waste valorisation and the (bio)circular economy.
For the fourth consecutive year, we will be attending Food Matters Live, an event dedicated to cross-section connections around the future of food and drink, and sustainable nutrition. This unique event will return to London’s ExCel and bring together exhibitors across innovative ingredients, research, brand and products together alongside an array of interesting and diverse conferences and seminars.
